My name is Amelia, and I recently graduated from WMU after studying dietetics, creative writing, and education. I was co-chair of The Campus Beet in 2010 – 2011, and now serve as a member of our space steering committee. After experiencing our nation’s food industry at its worst during a part-time gig at a fast food restaurant, I set a goal to one day open a slow-food cafe as a healthy alternative. When presented with the chance to help bring a long-standing cooperative cafe class project into fruition through adopting it as part of an environmental research fellowship, I jumped at the opportunity! I look forward to watch our vision become a reality, and to take what I’ve learned while working on The Campus Beet and apply it to future cooperative cafe endeavors!

I am studying Environmental Studies, Anthropology and French at Western Michigan University. I have a passion for healthy, mindful eating as well as sustainable everyday practices. I have been working on The Campus Beet for the past year and have gained so much real world knowledge and made many valuable connections within my community. Currently I am the historian as well as a member on the space committee. I will continue to encourage people around me through example to join this food revolution. I feel grateful to have the opportunity to work on this project to provide healthy, eco-friendly food to the WMU and Kalamazoo community alike.
